As restaurateur Connie Cheng was hoping to open her Asian-Cajun eatery in Dallas' popular Bishop Arts District at the beginning of crawfish season in early spring, the COVID-19 pandemic hit the United States, leaving her with nothing to do but refine plans with her business partner Dan Bui and wait for government restrictions to ease.
